Is it necessary for them to open so late in the day? I'd like to check them out but it's like they hate mornings.

It's common for most businesses that thrive on clients who come after a typical work shift 9-5 or kids after school to be open for those hours. They are targeting their demographic. Else the owners would be probably be paying employees to just sit at a counter and that sounds like a waste of money. Just swing by on the weekend when the are open earlier :) it's an awesome place.
