I eat here regularly, and i agree. Although you may not get an answer, as many sushi places get it from fisheries from far away places, that just package and freeze it correctly, giving it great freshness. I used to work for a sushi restaurant.
The Louisiana seafood exchange is the big local distributor, they have a mix of fresh and imported, and vice versa they sell local seafood to exporters. Yes you can get actual Louisiana crawfish in Japan.
Yeah... I have no idea. I would recommend sitting at the bar and chatting up one of the chefs. In my experience, you will not only learn a lot of fun information but you will be introduced to items that are unique and not on a menu. Good luck.
