Just a suggestion to create a quieter dining experience. Have you considered adding draped fabrics from the ceiling? I have seen this done in other restaurants and it reduced a lot of the noise.

I do agree, go there couple times a month and it definitely gets noisy. Hard to hear person across the table

Yes some sound deading would really be great . i have had friends say how good the food is but they have passed on dinning for special dinners like anniversarys becouse it wasjust to loud. I still go but would like it just a bit softer in the clatter and chatter dept.

Heavy fabric drapes pulled back from windows would look great with the time period and decor. Carpet squares work well and are easy to clean and replace as needed.
