Acme oyster house has the best gumbo in orange beach/Gulf shores. I frequent this establishment often just to get my gumbo fix but when I try to recreate it at home I’m missing something? Does anyone out there have their recipe?

They won't give that out I'm sure. Here's some southern hints: Buy your shrimp head on, boil the heads and shells and strain. Use this liquid. Make sure your roux is ready and don't burn it. Buy good andouille sausage and if not using okra add file (spice).
