Yes, weekdays you would have better luck. But as above say, definitely get there by / before 5 for best chance of securing a seating, on any day. If when you get to hostess she is still quoting for an earlier seating than you'd like (say, 6 instead of your preferred 730ish), it is acceptable to stand aside until she fills the earlier seating, then jump back in when she starts taking your seating. As a long-timer: Worth the coordination if youve never been!!
Weekends are easy busier. Get there before 5 when they start taking names. Expect a wait, maybe a few hours if you're not the first people online.
Busy all the time
Its very weather-dependant as people typicallly arrive an hour before it opens. If nice weather, more people will be willing to wait.
Not sure if he's open on Monday but any night would be better than Friday
