Generally for carpet it's expected that you will clear rooms as they will need to stretch it from wall to wall. With hard surface installations at the least I would say get all the small stuff and knick nacks because installers can move big stuff all to one side, install half the floor then move the big stuff on and finish the job. That being said they will appreciate anything you could move as it will speed up the job.
