As I've heard,most fishing boats that provide catch for Key Largo Fisheries will unload their catch mostly in the late afternoon. I believe weekdays in the morning are best to get the best possible fresh shrimp from the prior day.
Most boats fishing boats do come in late in the afternoon but a lot of the shrimp boats will get there early in the morning or late night but some won't sell direct to you because of obligation and contracts you can walk the docks and see if you get lucky
