There are multiple trucks with vegan options. I don't remember there being any vegan only trucks.
No one cart is vegan at this time. Many carts have vegetarian options particularly at Best Taste of India (half the menu is vegetarian), and Good and Evil wrap has many options. also the Thai carts (Thai Mango, Kesone, Anything Else ) and Bamboo cafe (Chinese) Many carts also have vegetarian options for their meals Since each cart owner makes the food for you you can always request a vegetarian option.
Many vegan options at different carts. I suggest to do a full walk around before making a decision. Good luck.
