You'll be fine, they give life vests and the rocks are not scary. I highly recommend getting a push stick so you don't get stuck atop The rocks or between. The water isn't very deep either, most of the time quite shallow.

The depth of the water will depend on if it has rained or not. I have been several times once it had not rained for days and the water was shallow and not fast at all. We were constantly having to get out and push ourselves. Then earlier this month we went and because of all the rain the water was higher and faster. It was alot of fun and I only got in the water twice. Once when I got stuck and once when I flipped out. You can tie yourself to others if you need to keep close to someone. I tied myself to my eight year old daughter. Someone in our group can't swim (like he really can't swim) and he had no problems. He purchased a stick and had a life jacket on.
No it's not deep at all and they do give you life vest probably waste deep is the deepest you're going to find however the rocks are everywhere the depth of the water is not dangerous but falling off the raft and hurting yourself on the rocks is that's the only thing I didn't like about it
The tubes have bottoms, the water at times in waist deep and then some very shallow spots you might have to hop out of your tube if you get stuck. They sale push sticks for $5. Well worth the money and you can keep them. They have 1hr & 2hr tubing. We did the 1hr but should have done the 2hr. They also have lifejackets if you'd feel better with that.
