We were on the Sapphire Princess in September this year and were docked at Pier 90 at the end of 50th Street in Manhattan, but Princess also use the Brooklyn Cruise Terminal. Best thing is to check with them but they may not know where they've been allocated until nearer the date. Sorry can't help with the hotels - live in UK. Enjoy your cruise.
I assume Princess Cruises out of the Manhattan Cruise terminal but I have only cruised on Norwegian and Carnival from this terminal.
