They give you 2 sheets of paper with options one is Kitchen which has appetizers, teriyaki, etc. and dessert and the other piece of paper has all the sushi options, you order as much as you want from either for a flat rate
You can order individual rolls or menu items if you don't want to do the all you can eat. Or, if you do, you select off a sheet of paper. You can order multiple times, so you don't have to get them all at once. This way you get exactly what you want and don't have to wait for the chefs to make it and hope you get to the buffet table first.
