How about simply asking for a biscuit rather than asking for it "light brown" and see if it comes out to your liking? And if not, address it with the staff and I'm sure they won't mind making another one.
I love their biscuits. Sorry you have trouble with it. Mine are always cooked just right.
I don't eat breakfast there must but when I have it was good. Sorry for your disappointment.
