Los cucos means the cookoo. That according to one of the waiters is because you have to be crazy to open a restaurant in this town. But they did, and they expand, so they are doing something right. Except for brunch, it needs to be open later for people who sleep late on the weekends.

The original to the best of my knowledge was on Spring Cypress just off SH 249, maybe mid-to late 1990s. They moved to a location on 249 just south of spring cypress after a few years. The location I first knew them at had been a Chinese restaurant before Los Cucos took it over. The newer locations look like an actual architect designed them. Trivia: I've never gotten a good answer when I asked an employee what "Los cucos" means.
It was on clay road with the palapo roof. Then they moved right next door.
