How early do they run out of food? Thinking of visiting during a layover, a Tuesday at 7pm

Brisket usually goes first, but most other meats are available by 7. (Night by night thing, be forewarned).

By that time they will be out of brisket.

They were completely out by 7pm this last Tuesday.

It depends on what conference are in town, but they ran out by 7pm the night we visited.
