I don't think I remember GF susitutes. I am GF too and just order with out.
Yes. I don't recall the names of specific dishes and specials but they have all the normal bread free breakfast options available gluten free and dishes with hash browns and other potatoes and veggies and/or meat. I don't recall if they have any gluten free bread.
