As an employee at another location I can tell you they are limited by the size of their kitchen as well. Only so many bodies can be making tacos in there, so even if they add more cashiers, you would just have to wait longer for tacos instead of waiting in line.
I order ahead online or phone. The worst is parking.

I have only been there a few times but the lines seemed to move pretty quickly. Maybe I just got lucky. Great food when you eventually get it...
