Consumers (just to remind you, in case you're clueless or have forgotten), who are the folks who answer questions like this, here, online, are the customers of this venerable institution, not the owners, nor the chef or cooks, nor the food buyers. Consumers would have no way to obtain this information, other than to ask the staff or owner for it. So, I have an idea: how about YOU visit Kermit's and ASK the owner? Hint: I bet he does not know, has not ever himself asked, and frankly does not care. Maybe he can tell you from whom he buys the RED hot dogs, and then YOU can ask THEM. However, that said, I'll give you a clue: ALL CURED MEATS CONTAIN NITRITES or NITRATES. Most likely, then, the answer to your question is YES.
