Do you have to book ?, we are visiting Busch Gardens this week and just worried about the location at the airport, somebody already said you don't have to pass through security, so I assume we can park and eat and then head home to orlando ?

Yes, use short term parking, under an hour is free. $4 for the next couple of hours. Restaurant has some interesting displays, good food too.

YES, YES, YES. ...park and enjoy the Hard Rock Cafe or any of the other restaurants at the Airport. Also shop the shops if they're open. It's fun to just hang around and watch people.
