I just got my violin back from getting a sound post reajustment and a new bridge, and it's in good shape. I tried tunning the G string and it snapped. Will the lack in pressure effect the sound post immediately?

No, only if all the tension is off the violin. One string at a time is how you change strings. Although the post should be adjusted every 3-6 months or if the viol.... is bumped, tension is lost, or before a concert to get the best sound.
