They don't give an answer on the website, but it started as a mobile BBQ place catering to bikers in the Northeast before they opened an actual location in Syracuse, NY. Probably just liked the name.

I think dinosuar was the nickname of the barrel that was first used by the founders to cook in. The chain started as a barbecue joint for festivals and motorcycle gatherings.
