Hi Peter! Thanks for the question! We do indeed make fresh bread every day, using a slow fermentation process. Currently we offer about five varieties, and our offerings do change seasonally. In addition, for the best selection and variety, we suggest coming earlier in the day, as the breads can sell-out on weekends. We hope to welcome you! Warmly- Ebbie Young
