To be honest, if you're just going to Watkins then one day is more than enough. There's nothing much to do there except for a very easy hike which will last for about 2 hours.
Yes, it's only 2-3 walk inside Watkins Glen Park
If it's a one day getaway trip it's a perfect spot to just go hang out and hike the gorge. However if you're looking for a hotel then yes possibly book one before going. Or bring camping gear and book for an overnight stay at the campsites around the gorge. It's beautiful. Just was there this passed week.
Check events in Watkins Glen area first. There are occasionally large festivals and races that can make getting a hotel difficult last minute
