Yoshizumi is different, there is no menu here, only two omakase options. Quality is amazing, since he only serves what is in season at the time.
I've never been to the above locations, but from what I see about them on their websites, they are like most sushi bars. Yoshizumi is much different. At Yoshizumi, the chef selects the menu ahead of time based on the season and availability, and you do not choose, he prepares each piece and gives it to you. Yoshizumi is also much more expensive, but the food is very, very good!
Also, the preparation is a totally different type compared to typical sushi in the states. It favors the addition of marinades to the fish, and distinctive flavor combos.
