Can my employer cut my unemployment benefits off if I refuse to work one day a week for them? I thought you only could lose your benefits if you refused to return if offered full time wirk.

They'd still have to at least pay you for the 4 days you are not working. If your boss could force you to work 1/5 days they'd ALL Be doing it. 4 days is considered full time so they could offer you 4 days, but not only 1 day.
