RDU isn't too large and the TSA is efficient here, of course two is recommended but every time I've been (not peak hours though) it's taken me maybe 30 minutes from car to gate

At least 2 hours

I fly out of here at least every other week and 2 hours is definitely needed during busy times.

I think that it would be good to be at the airport between two and three hours ahead of the scheduled flight's departure time.

This is a huge airport, 2 hours is the recommended time allotted. Thankfully TSA here is awesome. Please be aware that during the daytime there are two points of security. One on the lower level and one on the upper level. The upper level one is a longer walk but you skip the subway.
