Disney has only ever closed its park 4 times since its opening back in the 50's and I'm pretty sure it was only because of the hurricanes. So I would say yes they will most definitely be open unless there is another hurricane
They are open 365 days a year, only times they will close is due to a natural disaster such as a hurricane, etc. They may close early to capacity issues or inclement weather. Those last 2 reasons are only once in a blue moon.
