I think that you had the "French vanilla" ice cream. That style traditionally is yellow in color because the custard base used to make the ice cream has more egg yolks in it.
My guess, it's the vanilla? If you look at a vanilla bean, it is brown in color. So, maybe that's why some vanilla ice cream isn't as pure white as we might expect. I know it was good nonetheless.
