First cook them till about done but still a bit firm cut potatoes lengthwise scoop out potato but leave enough potato in so skin doesn't breakdown. Whip the scooped out potato with butter & bit of milk or cream season to taste stuff the whipped potato back into skins & bake awhile longer. I don't go by set time but by appearances. If you desire before baking rub skins with olive oil and coat with salt.

Try 350 oven initially for about an hour till sort of soft. Cut, scoop, mix in the goodies, and return to the skins. Bake another 15 minutes or they get a touch of brown on the peaks, your choice.
