They use liquid nitrogen to flash freeze their ice cream liquids and chosen flavors and mixtures into the more solid consistency of normal ice cream. Plain nitrogen isn't flammable or poisonous. It just requires a lot of energy to lower the temperature of nitrogen to -321 degrees Fahrenheit. Thankfully it "warms" up to normal ice cream temperatures before it is served. Safe and tasty!

I was uncomfortable watching it dripping down into my ice cream. Turns out it was a good thing. My ice cream stayed frozen much longer than my daughter's. Let them freeze your as much as they want.
