Will the Monday/Tuesday hours extend ever? I'd love to eat here but my schedule won't allow it except for Monday or Tuesdays and I'm at work 8-2:30 those days.

Would not count on that. They do have a second location now. I too, would use vacation time for Bud's. Every bite a delight.
