I recently visited Afuri in Tokyo, which is a hole-in-the-wall Ramen shop. With really excellent Ramen. Afuri PDX is a nice sit-down restaurant with an extensive menu featuring a lot of local ingredients. Is that "authentic?" I would say yes. The preparation, attention to detail, and love are all there. Restaurants in Japan are inventive and highly prize local ingredients. So by that standard, Afuri adding microgreens to your Sushi is totally authentic. Afuri PDX uses a lot of Yuzu, which is decidedly not local, but harks back to the Yuzu Ramen for which they're famous in Tokyo.
They are authentic Japanese. Afuri is a Tokyo based restaurant. Excellent good.
No, but try the tuzu shio, its amazing
No. Some of the dishes have ingredients local to Oregon.

Is there a bar area where people can hang out and get drinks if they arrive before our reservation?
