What is the process when you’re interested in a particular animal? Do they let you walk it around the vicinity or let you interact with it in an enclosed area? Or can you only strictly see them behind the cages?

Yes they have and area to interact with the animal you are interested

There is an enclosed area off to the side where you can interact with the animal.

Yes they have an area to get acquainted with the animal all you have to do is inquire about the animal and let them know you're interested
