Coles has a lot of dairy free options, as far as corn and garlic I personally am not sure, but the owner is amazing.. If you call in and ask I'm sure she could tell you what has those ingredients
Almond or coconut flour are great substitutions. Lots of recipes online.
I believe they have non dairy also

The best thing to do imo would be go to the bakery and read labels and talk to the folks in the know.. Dairy free is not uncommon for us gf folks so that's the easy part.. Corn starch can be easily replaced in most recipes with just about any other starch..
