You can call ahead for one of their packages and it will be ready when you arrive. (And you actually get a discount for calling ahead on at least one of them.) They are a full-service butcher shop, so you would probably want to choose your particular cuts of meat from the case, and if you wanted something that was not on display, you could ask, and they likely would cut it for you while you wait. I have done that in the past for steaks. They also will custom-trim roasts, and if you are buying something like a prime rib roast, they can cut the bones off, then tie them back on - makes it nice as you get all the bone flavor in your prime rib, but the bones come right off so you can easily slice and serve.
