Gartner's will process wild game into pretty much anything you would like (sausage, pepperoni, hamburger, etc). They do require a minimum of 25 lbs or they will add there own meat to it in order to reach 25 lbs.

They will process 25lbs and above. Anything less and you would have to buy their trimming to meet the minimum 25lbs. I had 19lbs of wild boneless hog meat and had to buy extra 6lbs of beef trimmings to make 25lbs of bratwurst. Best brats ever.
