Does Gartner remove the membrane from the inside of baby back ribs? I’m reading you should remove that memebrane but I’m having a hell of a time doing it. It seems very thin compared to what I’m seeing online.

I used to work at a rib restaurant. Get a fork and move it under the membrane along the bone at the end of the rack. You then grab a hold of the membrane and rip it off in one piece. Makes it more tender without it.

I don't know if they do or not but I can tell you after my first experience removing the membrane, I never did it again and the ribs turned out great.
