Snowshoe is a "reverse" mountain in the sense that you drive to the top of the mountain, where the lodge is, ski down and ride the lift back up. There are 1-2 spots at the bottom of the slope that serve coffee, hot cocoa, light food, etc. They are decent vantage points. Not sure which slopes they are at the bottom of, but just look at the map. Hope this helps!
The Boathouse is one of the restaurants next to the pond at the bottom of the main trails from the Village. That's the most visible spot of riders on the slopes but she would need to get down the mountain somehow first. Snow mobile probably? And then back up. In the Village you can see the tops of the slopes from hotels, restaurants & shopping centers but not much action up there, that's more like people watching.
The Silver Creek side is a more traditional ski mountain, in that the lodge is at the bottom, but I'm not sure there's much that can be seen from the lodge area.
I know for sure at the bottom of the "western territory" slope there is a little cafe, but that slope is for more advanced skiiers, there are a few spots at the top that you can watch though
