Looking at the guidelines and it says exceptions for not being vaccinated require valid proof. I fall under the medical exemption exception but it doesn’t say what counts as proof, normally I just use a note from my doctor. Is that what I can use?

No. You must show a negative covid-19 test within 48 hours of entry or proof of vaccination. That's it, period. Your medical exemption doesn't meet that requirement.
