Fort Myers Doc Fords definitely has a dock to tie up to. I watched many pull up there. Captiva Doc Fords, i am not sure that there is a dock there. I was only there once and we sat on the front patio.
I am not for sure on getting to the One on Ft. Myers by boat, but there is a Doc Ford's on Captiva by South Seas resort and there is another one they just built across the street from Bailey's grocery store. You might check Tarpon Bay Boat launch area to see if they have boat taxi over to Doc Ford's in Ft. Myers.
You can arrive by boat at the Fort Myers Doc Ford's. I have never been to the Captiva location, you should contact them as it is very likely they, too have a dock.
