If you go to Newman's Bakery, you can make a reservation with staff and pay there. The owner does a presentation out side the castle with some history and information while keeping the kids entertained. You would be able to see some interesting things even if you could not hear. Then when they finish up inside the draw bridge. He let's all the guest roam around on there own.

You can take photos. As far as makingn a reservation, I believe you can only call. They don't give you the address of the place, instead the address to the local diner/store Mr. Newman owns and they give you the map there. They do a short tour but it's very laidback but you are free to roam around afterwards to take pics. They also serve a sandwich lunch in the castle for the group. This isn't a big tourist spot and is a courtesy of Mr.Newman who lives there , so you are actually going into his home.

After the introduction, there will be a time to roam around. You can walk around the moat/pond before the session starts.

You would be free to look around, for reservation I couldn't do it online, but you'd probably be able to go to the bakery and do it there. The whole group will gather at the bakery and then go to the castle. Another thing to mention is, don't have an expectation like you're going to a historic Castle, it's a newly built with an old look Castle.
