Do they make mashed potatoes by mashing normal boiled potatoes, or do they use some kind of instant mix?

The potatoes I had last night were pretty soft. No real consistency. But the usual. Plus I asked for just a bit of sour cream. Recieved two huge amounts and charged for them as well. Next time I'll stick with a baked potato.
