I think you need to ask the restaurant this question. It is beyond what a guide can respond to.

I don't work for Panini's, but I imagine dine-in customers take priority over pick-up customers & that's why you have such a long wait.
I agree with Eileen. However, I beleive there is more information needed. Has this happened repeatedly? Perhaps you caught them on a bad night & it took them longer to unforeseen issues. I'd contact the manager & give them another chance.
So you can eat it at home or a different place. Think of it as some type of catering.
