I believe they have comment cards by the register. Also, you can ask for the manager and detail exactly why your service was so good. It is nice for them, when they can hear the good things.

My fiance and i always write "thank you for great service" on the receipt knowing they are collected and filed by a manager later that day. By calling it out it's written record (immediate gratification for server beyond gratuity) and passed on with their name/server Id that's usually recorded on that same receipt. This also is applicable to every restaurant, too, without searching for a comment box or hoping word of mouth makes it.
