You should be fine, they discourage it, but everytime I drive by there is at least 4+ parked there, even more at night.
We have taken advantage of the overnight parking in Idaho a number of times, however, in Bend there are signs posted that there is no overnight parking, but that doesn't seem to deter people. I think if you're parked away from the entrance of the store they won't bother you. That's where I've seen motorhomes and trailers plenty of times before.
Yes....many people do this....summer is busy though so expect lots of traffic and noise....
I don't think you'll have an issue, i commonly see trailers and/or RVs in the back portion of their lot
