Camelback has 37 trails but they are not all currently open. I would check their site for which are open the day you plan to visit as it changes with the weather. I have not been to elk, so I can't help with the comparison
Camelback has 37 trails. In comparison to Elk the trails are a bit shorter and the whole mountain has night skiing. The two main lifts are also faster as they are detachable.
