While fat is trimmed before smoking, some must be left to provide moisture and flavor! The fat is rendered during the long smoking process. When it's done, and you press your finger into the fatty areas it is literally like pushing your finger into whipped cream! Try both!

More juice on the moist. I believe it to be fattier. I prefer the regular brisket. It's personal preference.
