It's a grits cake that they serve the shrimp and grits with. If you want grits in a cake format, I'm sure they could do it. In order to do grits in a traditional manner for one order you gotta have a burner being used up. The chef could want to focus their resources otherwise.
Why didn't you ask the waiter? In my experience they give you whatever you ask for at Clyde's.
