Pandemic is causing them to have shortages or be out of some products, but never had anything but good stuff from them! Glad they have blue cheese! And dark canyon edam. 10/12/2022 prices have gone up, but its happening everywhere

It's UHT I believe it stands for ultra high temperature pasteurization. Wich kills all bacteria. When regular pasteurization is done it can miss some. If all bacteria is killed and no air is introduced back into it the bacteria cannot grow this is the reason for the long shelf life.

The USDA states that UHT Shelf-stable milk has an average shelf life of 9 months. Gossner's seems to label their cartons with that in mind, so I would say to judge it by the printed date. My last batch I purchased here is labeled for a little under a year, but considering how most of their dairy is sourced locally and packaged on-site, they are probably able to get it distributed faster than average for this location.

I second what Carrie said. It's pasteurized and also heated to an ultra high temperature for a short time period, eliminating any bad bacteria that may be present. It is then run into a filling machine that keeps it sterile and is packaged into an airtight and light preventing carton. By maintaining it's sterility it can be shelf-stable and have a long shelf life. The process has been in Europe for over 50 years, and it's quite common there. The founding CEO of Gossners brought that processing technique to the US over 30 years ago and it has increased in popularity because of all the potential uses for it: camping, school lunches, food storage, etc.
