"Latter-day" means near the last days- it reflects our belief that we are living in the final dispensation before the Second Coming of Jesus Christ. "Saints" is a name for followers of Jesus Christ. (Not like Catholic saints but just the general term for Christian believers as used in the New Testament) So "Latter-day Saints" are followers of Jesus Christ preparing for his Second Coming.
