We did the Nags Head dolphin tour and loved every minute of it. The boat was comfortable, our captain and tour guide were both very friendly and knowledgeable, and we saw SO MANY dolphins. Definitely one of the highlights of our trip to OBX.

Yes we sell kites in the hang school, at jockeys ridge state park. Our main store also has a massive selection which is location directly across the street from the dunes.
I did a kayak tour and it was basically going through the marshes on the bay side add observing wildlife but that was years ago. Not sure if that's even the same category.
